Spinach Kale Bacon Dip


4 slices, bacon
1 medium onion, chopped
1 – 10 oz. package frozen spinach, thawed, chopped and drained
3 cups kale, chopped
8 oz. cream cheese
8 oz. extra sharp cheddar cheese
½ cup heavy cream

  1. Preheat oven to 350 degrees.
  2. Over medium-high heat, cook bacon in a non-stick pan.
  3. Once fully cooked, remove from pan and drain onto paper towels. Then chop into pieces.
  4. With the same pan, lower the heat to medium-low and add the onions. Cook for 5 minutes.
  5. Add the kale and thawed spinach, cook for another 5 minutes. Remove from heat.
  6. In another pot add the cream cheese, cheddar, and heavy cream. Stir constantly until completely melted.
  7. Add bacon and spinach mixture to the cheese. Mix to combine.
  8. Pour mixture into an oven-safe baking dish and bake for 20 minutes or until bubbly.
